INGREDIENTS:
2 tbsp. prepared mustard 4 garlic cloves, mashed 1 tbsp. lemon juice 1 tsp. salt 2 chicken breasts cut in 4 pieces 1/4 cup grated onions | 2 cups grated potatoes, drained 2 tbsp. olive oil 1tsp salt salt 1/4 tsp. pepper 2 tbsp. butter |
DIRECTION:
- Preheat oven to 425ºF. Liberally grease an 8” square glass baking dish with 2 tbsp. oil or margarine. Combine mustard, garlic and lemon juice and marinate chicken pieces in it for 30 minutes; transfer chicken to well greased pan.
- Squeeze out juice from potatoes, mix with onions, olive oil, salt sand pepper. Cover chicken with mixture. Dot with 2 tbsp. butter. Bake for 30 minutes until potatoes are golden and crisp. Broil last 5 minutes, if necessary to crisp the potato topping. Garnish with chopped green onions or parsley.
