INGREDIENTS:
1/2 cup butter 3/4 cup sugar 2 tbsp. lemon or orange juice 2 large eggs 2 tbsp. lemon or orange rind 1-1/2 cups all-purpose flour | 1 tsp. baking powder 1/2 tsp. salt 1/2 cup milk Glaze: 2 tbsp. confectioner’s sugar 2 tbsp. lemon or orange rind |
DIRECTION:
- Preheat oven to 350ºF.
- Grease 8” loaf or square baking pan.
- Line bottom and sides with parchment paper.
- Cream butter, gradually beat in sugar.
- Add eggs, one by one, beating well after each addition.
- Stir in lemon or orange juice and rind.
- Combine flour, baking powder and salt, blend into egg mixture alternately with milk, starting with flour and ending with flour. Mix well and pour into pan.
- Bake at 350ºF for 50 – 60 minutes. Cake is done if tester inserted in the middle comes out clean. Remove cake from oven, poke holes on top of cake.
- Mix glaze and drip over cake. Cool for 5 minutes, remove from pan and transfer to rack to cool completely.
