Fresh Tomato Salsa

INGREDIENTS:

4 large tomatoes, seeded, chopped

1/2 cup chopped onions

2 garlic cloves, chopped, mashed

1/2 cup fresh cilantro, chopped

3 stalks green onion, chopped

1 jalapeno pepper, seeded, chopped
3 tbsp. fresh lemon juice
1/2 tsp. salt

1/4 tsp. ground pepper

2 tbsp. sugar

1 tbsp. olive oil

2 tbsp. tomato paste

DIRECTION:

  1. Drain tomatoes, and combine all other ingredients in a medium bowl. Let it set for 30 minutes for the flavors to blend. Do not refrigerate.
  2. If salsa is too runny, spoon off some of the liquid, transfer to bowl, serve with corn chips, tacos or toasted pita bread triangles.

Note: Use within 3 hours.

Preparation time: 15 minutes, plus flavor blending time 30 minutes
Makes: 2 cups
