INGREDIENTS:
3-pound chicken, cut in half 1 tsp. salt Ginger Onion Sauce: 1/4 cup canola oil 1 tsp. salt | 1 tsp. minced garlic 1 tbsp. chopped ginger 1/2 cup green onions, minced 1 tsp. red chili pepper flakes 1 tbsp. patis |
DIRECTION:
- Boil enough water to cover chicken and add 12 tsp. salt.
- Put chicken in boiling water and cover, let it simmer for 30 – 45 minutes or until chicken is tender.
- Remove the chicken and let it cool. Discard skin. Cut the chicken into serving pieces and arrange on platter. Save broth and freeze it of other uses.
Ginger Onion Sauce:
- In a skillet, heat oil until smoking point. Add salt, garlic ginger; stir fry in the hot oil for a few seconds. Turn off heat. Add the rest of the ingredients and mix well.
- Taste and correct the seasoning.
- Sauce is supposed to be slightly salty because the chicken is not.
- Serve sauce in a separate bowl with chicken garnished with cilantro leaves.
