Chicken With Ginger and Onion Sauce

INGREDIENTS:

3-pound chicken, cut in half

1 tsp. salt

Ginger Onion Sauce:

1/4 cup canola oil

1 tsp. salt
1 tsp. minced garlic

1 tbsp. chopped ginger

1/2 cup green onions, minced

1 tsp. red chili pepper flakes

1 tbsp. patis

DIRECTION:

  1. Boil enough water to cover chicken and add 12 tsp. salt.
  2. Put chicken in boiling water and cover, let it simmer for 30 – 45 minutes or until chicken is tender.
  3. Remove the chicken and let it cool. Discard skin. Cut the chicken into serving pieces and arrange on platter. Save broth and freeze it of other uses.

Ginger Onion Sauce:

  1. In a skillet, heat oil until smoking point. Add salt, garlic ginger; stir fry in the hot oil for a few seconds. Turn off heat. Add the rest of the ingredients and mix well.
  2. Taste and correct the seasoning.
    • Sauce is supposed to be slightly salty because the chicken is not.
  3. Serve sauce in a separate bowl with chicken garnished with cilantro leaves.
