INGREDIENTS:
1 pound pork cut into serving pieces 1 tsp. salt 1/8 tsp. pepper 2 tbsp. canola oil 3 garlic cloves, minced 1 medium onion, sliced thin 1/2 cup tomato sauce 1/2 cup water | 1 tbsp. soy sauce 1 small red or green bell pepper, cut into strips 2 medium potatoes pared and cut into 6 pieces each 2 tbsp. fine bread crumbs or flour or cornstarch |
DIRECTION:
- Season pork pieces with salt and pepper. Let it stand for 10 – 20 minutes.
- Heat oil in skillet, and fry pork slices until light brown for about 5 minutes. Pour off excess oil.
- Add garlic, onions, tomato sauce, water and soy sauce. Cover and let is simmer for 30 minutes or until pork is tender.
- Add potatoes and sweet pepper. Cook another 20 minutes or until potatoes are done. Taste and correct the seasoning.
- Thicken sauce with bread crumbs or flour or with cornstarch.
