INGREDIENTS:
2 pounds pork shoulder or butt cut into 1-1/2 cubes 1/3 cup vinegar 1/4 soy sauce 5 garlic cloves, pounced 2 bay leaves | 1/8 tsp. dried oregano 1/4 peppercorns, cracked 1 tbsp. sugar 1/4 cup water 1 tsp. salt |
DIRECTION:
- Combine all ingredients (except 1/4 cup water) and marinate overnight in a tightly sealed plastic bag or covered container in the refrigerator.
- When ready to cook, arrange pork cubes in a 9”x13” baking pan, pour marinade over it and bake at 350ºF for 45 minutes or until pork is done. Transfer pork to a rack in a roasting pan. Broil for 2 minutes to brown meat. Transfer to serving plate. Add 1/4 cup water to roasting pan where pork was broiled.
- Heat over medium heat, scraping bottom and sides of pan for browned bits.
- Cook until liquid is reduced to half, and pour it over the pork in serving plate.
Preparation and cooking time: 45 minutes plus marinating time
