INGREDIENTS:
2 pounds stewing beef, cubed 1/3 cups flour 3 tbsp. oil 2 garlic cloves, minced 1 large onion, chopped 1 cup chopped fresh tomatoes 1 cup hot water 1 bay leaf | 2 potatoes, diced 1 carrot, diced 1 celery stalk, chopped 1 tsp. salt 1/8 tsp. pepper 1 tbsp. soy sauce 2 tbsp. chopped parsley |
DIRECTION:
- Coat beef cubes thoroughly with flour.
- In a heavy saucepan heat the oil over medium high heat, brown beef on all sides, a handful at a time. Set aside.
- Sauté garlic, onions, and tomatoes for 5 minutes until mushy. Return beef to saucepan, add water and bay leaf, cover tightly, simmer to 1 – 2 hours until beef is tender, stirring occasionally.
- Add more water as needed.
- Add potatoes, carrots, celery, salt, pepper, and soy sauce, and simmer for 30 minutes or until potatoes are done. Taste and correct seasoning.
- Thicken broth with 2 tbsp. flour dissolved in 4 tbsp. water, if necessary. Stir solution into broth until well blended, about 5 – 7 minutes.
