Beef Stew

INGREDIENTS:

2 pounds stewing beef, cubed

1/3 cups flour

3 tbsp. oil

2 garlic cloves, minced

1 large onion, chopped

1 cup chopped fresh tomatoes

1 cup hot water

1 bay leaf
2 potatoes, diced

1 carrot, diced

1 celery stalk, chopped

1 tsp. salt

1/8 tsp. pepper

1 tbsp. soy sauce

2 tbsp. chopped parsley

DIRECTION:

  1. Coat beef cubes thoroughly with flour.
  2. In a heavy saucepan heat the oil over medium high heat, brown beef on all sides, a handful at a time. Set aside.
  3. Sauté garlic, onions, and tomatoes for 5 minutes until mushy. Return beef to saucepan, add water and bay leaf, cover tightly, simmer to 1 – 2 hours until beef is tender, stirring occasionally.
  4. Add more water as needed.
  5. Add potatoes, carrots, celery, salt, pepper, and soy sauce,  and simmer for 30 minutes or until potatoes are done. Taste and correct seasoning.
  6. Thicken broth with 2 tbsp. flour dissolved in 4 tbsp. water, if necessary. Stir solution into broth until well blended, about 5 – 7 minutes.

Preparation and cooking time: 2 hours and 30 minutes
Serves: 6 –8
