INGREDIENTS:
4 large tomatoes, seeded, chopped 1/2 cup chopped onions 2 garlic cloves, chopped, mashed 1/2 cup fresh cilantro, chopped 3 stalks green onion, chopped 1 jalapeno pepper, seeded, chopped | 3 tbsp. fresh lemon juice 1/2 tsp. salt 1/4 tsp. ground pepper 2 tbsp. sugar 1 tbsp. olive oil 2 tbsp. tomato paste |
DIRECTION:
- Drain tomatoes, and combine all other ingredients in a medium bowl. Let it set for 30 minutes for the flavors to blend. Do not refrigerate.
- If salsa is too runny, spoon off some of the liquid, transfer to bowl, serve with corn chips, tacos or toasted pita bread triangles.
Note: Use within 3 hours.
